All our beef is dry aged, enhancing its remarkable tenderness and flavor.

Sample 10 pound bundle:

• 3-4 pounds of butcher's cuts such as:
• Petite Sirloin
• Bavette
• Santa Fe steak

• 2-3 pounds of traditional classics such as:
• Shoulder Center
• Petite Tender
• Eye of Round

• 2-3 pounds of hearty cuts such as:
• Short Ribs
• Cross-cut Shanks
• Roasts
• Kabobs

• 2 pounds of ground beef (80/20)

The 20 pound bundle is proportional to the above 10 pound example, with a greater variety of cuts, and is more likely to comprise larger cuts like back ribs.
