About Our Wagyu

What is Texas Craft Wagyu?

Texas Craft Wagyu is a premium Wagyu beef retailer specializing in high-quality, authentic Wagyu products delivered directly to your door. Learn more about our story.

Do you raise the cattle yourself?

Yes, we raise our own Wagyu cattle and also partner with a small group of carefully selected local Wagyu producers. This allows us to maintain strict quality standards and ensure every cut meets our premium specifications. By combining our own herd with trusted local ranchers who share our commitment to excellence.

How is your Wagyu beef different?

Our Wagyu beef comes from the same breed as Kobe beef and authentic Japanese A5. We raise our cattle with exceptional care, resulting in superior marbling, tenderness, and flavor that sets our beef apart from conventional options.

Is your beef Organic?

While our beef is not certified organic, we raise our cattle with the highest standards of care and quality. Our focus is on producing authentic Wagyu beef with exceptional marbling and flavor.

Is your beef grass fed?

We use a hybrid approach combining grass feeding with grain finishing. Our cattle in the beef program receive grain to achieve the exceptional marbling that makes Wagyu beef so special, while our cow-calf breeding herd is mostly grass fed with minimal grain supplementation.

Where do you source your grain?

The grain we use is grown locally in Northeast Texas and sourced from our local farmer's co-op, supporting our regional agricultural community.

Do you dry age?

Yes, we dry age on the rail, meaning the two halves of the carcass are hung up to dry age whole in the chiller at the processor. This traditional method enhances the flavor and tenderness of our already exceptional Wagyu beef.

Products

What are your favorite cuts?

We love our signature steaks like Ribeye, NY Strip, and Filet Mignon, but we're also passionate about butcher's cuts like Denver (Zabuton), Bavette, Flat Iron, and the Ribeye cap. For everyday cooking, our family relies on Farmer's Cuts like Santa Fe steaks and kabobs. For BBQ, nothing beats our Back Ribs and Brisket. We also offer specialty cuts for diverse cuisines including Kalbi short ribs for Korean BBQ, sliced beef for hot pot and stir fry, Skirt and Flank for Tex-Mex and Latin dishes, and traditional cuts like Oxtail and Beef Cheeks for slow-cooked comfort food. Check out our full selection to explore all our cuts.

Are your products hormone-free or antibiotic-free?

We do not make use of hormone implants or added hormones. Antibiotics are used only in extremely rare cases to treat a specific acute condition. No sub-therapeutic antibiotics are ever given.

Do you sell live cattle?

Yes, we offer live cattle for sale to those interested in raising their own extraordinary beef. Visit our cattle for sale page for current availability and pricing.

Do you sell quarters, halves and whole animals?

No, we do not sell quarters, halves, or whole animals. We believe our a la carte style of ordering gives you better choice to select exactly the cuts you want. However, if you want to get a great value and experience a cut from every primal of the animal, you can order our Wagyu Experience Bundle.

Ordering

What payment methods do you accept?

We accept all major credit cards, debit cards, Shop Pay, and Google Pay. Apple Pay was too buggy so we turned it off. Please choose another payment method. If you encounter any other payment errors then please let us know and we will fix the bug.

How do I add to my order?

If you want to add to an order for the current delivery period, then place a second order. We will manually refund the duplicate delivery fee. You will receive a refund notification after a few business days once the payments system processes the refunded delivery fee.

You're out of stock, what do I do?

We typically harvest one animal at a time, so popular cuts will sell out quickly. If we're out of stock you will see an Out of Stock button on the detailed product page where you can sign up for automatic restock alerts. We restock approximately once per month and when we update site inventory you will automatically receive a notification.

Storage

How should I store my Wagyu beef?

Keep your Wagyu beef frozen until you're ready to use it.

How long can I keep it for if frozen?

Frozen Wagyu beef will maintain optimal quality for up to 12 months when stored properly at 0°F or below.

Will it fit in my freezer?

A typical home freezer has plenty of space for 20 pounds of frozen beef even when partially filled with other items.

How do I thaw my Wagyu beef?

For best results, thaw in the refrigerator 24-48 hours before cooking. Once thawed, use within 3-5 days. One-pound packages of ground beef thaw rapidly, in under an hour, when submerged in cold water while still in their packaging. Check out our cooking tips for more guidance.

Cooking

How do I cook Wagyu beef?

Wagyu beef is best cooked simply to let its natural flavor shine. We recommend seasoning with just salt and pepper, then searing over high heat. Due to the high fat content, Wagyu cooks faster than conventional beef—use a meat thermometer for best results. See our guide on the perfect steak.

Can you recommend ground beef recipes?

Yes! Check out our Wagyu Ground Beef product page for a list of delicious dishes you can make with our premium ground beef.
